- Burghound: A highly restrained nose requires considerable swirling to liberate the beautifully well-layered aromas of mineral reduction, white rose, spice, citrus and a wisp of exotic tea. Like the Pucelles there is excellent richness and detail and much more minerality-suffusing the almost painfully intense finale that is breathtaking in its persistence. This is a gem of a Puligny 1er and in 2016 is a lovely blend of power and finesse. In sum, this is a knockout.
- Vinous: Superb floral lift to the aromas of stone and citrus fruits, minerals and smoke. Compellingly silky, even thick, on entry, but with terrific inner-mouth mineral lift shaping and intensifying the wine’s lemon and floral flavors. Dense with dry extract, this outstanding 2016 premier cru leaves the salivary glands quivering on the very long, slow-building finish. Ninety percent of these vines are 70 years old, according to Boillot.

Domaine Henri Boillot is a wine producer based in Meursault known for its red and white wines from Ctes de Beaune appellations. The estate was named Domaine Jean Boillot until 2005, but was changed when Henri Boillot bought out his siblings in order to distinguish it from his brother’s new Domaine Jean-Marc Boillot. Henri had previously set up Maison Henri Boillot for ngociant wines and retains these labels to distinguish them from estate wines. A majority of Boillot’s white wines are sourced from premier crus in Meursault and Puligny-Montrachet, including the entire 4 hectare (10 ac) Clos de la Mouchere vineyard. The domaine’s Pinot Noir-based wines come from premier crus in Savigny, Beaune and Volnay. In the vineyard, Boillot avoids the use of insecticides and herbicides. Heavy pruning takes place in spring to limit yields and fruit is harvested as late as possible to ensure maximum phenolic maturity. The Henri Boillot winery is situated in Meursault. The white wines are fermented in 350-liter barrels and bottled after 18 months of barrel ageing. The Pinot Noir is fermented in stainless steel tanks with some stems retained, and then sees 18 months of barrel aging. The premier and grand cru wines under the Maison Henri Boillot label are sourced from single-vineyard plots with single owners to preserve the authenticity of the site.
