JX1 Ensamble con Cucharilla de Jose comes from Jose Garcia, the son and business partner of Pensador’s original Mezcalero, Atenogenes Garcia, whose methods share a family resemblance with his fathers, but with a preference for rare agaves and experimental ensambles, as this spirit demonstrates.
