Here’s something a bit unusual, albario, a grape native to Northern Spain, but grown in Gisbourne in New Zealand. 90% of the grapes are fermented in stainless steel with cultured yeasts while 10% undergoes wild fermentation in old oak to add complexity. This would be splendid with all kinds of seafood.
