Agave Source: Michoacn Highlands. Agave Sugar: 100% Estate Blue Weber; 10 years old. Cooking Method: 16 hours in autoclave. Milling: Shredder/Roller. Fermentation: Stainless steel tanks using Champagne yeast. Distillation: Double distilled. Still Style: Stainless steel pot. Aging: 30 months in used Jack Daniel’s white oak bourbon barrels; 10 years in bottle (maduro tequila). Additives: None. Farming: The family rotates the agave plantation with up to 8 years of rest for the soil after a harvest. They also have cattle, horses, and a variety of other critters on their land to create a thriving ecosystem.
